The best match for the aged Sake is with the Stilton, a blue cheese. The aged Sake is very strongly flavoured, with aromas of nuts, old furniture, spice, roasted meat and a sweetly fruity, textured, slightly raisiny palate. The complexity and harmony matches the spicy bite and creaminess of the blue cheese so well. This is a very hard match, but the richness and savoury complexity of this aged Sake does a great job. It's not overwhelmed, but it occupies a different flavour space to the blue cheese, and so isn't in competition. The sweetness of the Sake also matches well, in analogy with the famous pairing of Port and Stilton.

The Sake presents amazing caramelized notes with a rich, umami-laden finish. To pair it with Danish blue cheese or Stilton blue cheese is a magical journey through umami, saltiness, sweetness, milkiness and a myriad of other flavours. Not only could the Sake be used to cook with, but incorporating some of it into honey would also make it a delicious accompaniment to blue cheese. Other cheeses, such as cheddars or brie, would also benefit from richer Sake in the yamahai or kimoto categories.

They have so much Sake and that popular ones are Ginjo Kuroshima, Ichinokura, Masumi and that they sell one expensive Hakkaisan £700 sake. The autheticity is emphasised by the manager who says all the food is fresh, traditional and attracts a lot of Japanese customers. He explains they use the best ingredients and have their own unique sushi rolls, the tower bridge roll with salmon, crab sticks, tuna, avocado, asparagus, tobikko flying fish roe, soy paper. Also they have a cheese sushi, the london bridge roll; with salmon, shiso, melted cheese, crispy lotus root chips.
