The best match for the aged Sake is with the Stilton, a blue cheese. The aged Sake is very strongly flavoured, with aromas of nuts, old furniture, spice, roasted meat and a sweetly fruity, textured, slightly raisiny palate. The complexity and harmony matches the spicy bite and creaminess of the blue cheese so well. This is a very hard match, but the richness and savoury complexity of this aged Sake does a great job. It's not overwhelmed, but it occupies a different flavour space to the blue cheese, and so isn't in competition. The sweetness of the Sake also matches well, in analogy with the famous pairing of Port and Stilton.

The Sake presents amazing caramelized notes with a rich, umami-laden finish. To pair it with Danish blue cheese or Stilton blue cheese is a magical journey through umami, saltiness, sweetness, milkiness and a myriad of other flavours. Not only could the Sake be used to cook with, but incorporating some of it into honey would also make it a delicious accompaniment to blue cheese. Other cheeses, such as cheddars or brie, would also benefit from richer Sake in the yamahai or kimoto categories.

Sake in Japanese Tea is in fact a special Earl grey tea Sake called 'Niizara Kishinamien Earl Grey' an elegant Sake that has a very distinct flavour, slightly spicy with sweet floral citrus tones. They also have Yuzu 'Yamamoto Yuzu Omoi' which is both great for cocktails and on it own, both sweet and smooth. They also have a Dewatsuru Sake; 'Junmai Sakura Emaki' a pink colour with a cherry, honey, blossom aroma and the flavours of pear and honey this is a very elegant Sake. Their full bodied, rich 'Kamoizumi Shusen Junmai' with umami, mushroom, and leafy herbal notes, also goes perfectly with the creamy Comté cheese.

Offering a unique east meets west take on dining. They serve ten different kinds of sake, including a Super Premium Sake, Isake 19 worth £1,150, a special Sake known for its complexity. It is clean and fresh like no other sake. Other sake they serve are renowned Dassai 39 which is fruity with hints of pear, apple and honeydew, and Takara Gokai Karakuchi which is classic and clean with a coffee and walnut flavour. This type of sake really enhances the flavour of their dishes. Mio Shirakabegura, sparkling sake, Sumosan Genshu which is rich and strong in flavour, Azure Sake -a contemporary style sake with aroma of pear which is fruity and refreshing, and Dassai 23 smooth and layered with hints of grape and strawberries. They also have two Heaven sake; Junmai Ginjo gives smooth and velvety taste and it is elegant with hints of lemon peel and creme brulee, and Junmai Daiginjo is expressive and fruity with blueberry and pineapple flavours. Maze by Gordon Ramsey restaurant has sushi platters and a sushi menu for their diners. Very popular and typically paired with either of their two sakes, Akashi tai Honjozo genshu and Daiginjo. Enjoyed by customers due to the light texture and flavour of the sake that compliments the sushi well. They do a beautiful sashimi moriawase with the options of 3 fish or 5 fish and nigiri moriawase with 5 and 7 pieces that is extremely popular and complimented by diners. One customer never ate raw fish and loved it after trying this exquisite Japanese dish.
