This Sake showcases how smooth and refreshing Sake can cut through the briny style of the oyster. It really balances the salty characteristics and it opens the flavours and makes you chew through the oyster and extract the sweetness of the flesh. This is a great alternative for Muscadet, one of the classic pairings with oysters. It has a perfect balance of acidity without overpowering the flavours of the oysters and it finishes very clean and sweet and lingers in the end. The sakes help eliminate the metallic flavour of the oyster and makes it more delicate and umami-driven with a sort of honeydew finish at the end.

The Aged Choryo Taru Sake 'Cedar Country' is full of flavour and aroma. Staying true to its name and aged in a cedar barrell, it has a woody and cedary taste. This leaves a very distinctive flavour and many places do not have it. This also comes in the Sake tasting menu along with the Nigori for customers to gain a broad experience of the variations of Sake. They also serve warm sake. Aun's Oyster Ajillo is fresh oyster soaked in olive oil, and the Garlic (ajillo in Spanish) fine chopped. Addint to the mix, it is served on top of a crunchy nori seaweed deeply fried in Tempura sauce and finished up with seasonal garnish, often with som red chilli filaments.
