Aromatic Sake has a nice, bright uncooked rice flavour. It starts smooth to the palate and has a medium-high acidity. It lingers and is perfectly soft water-brewed with notes of banana and melon. The mild acidity of the Sake works with the vinegared rice and hint of wasabi which tends to elevate flavours. It cuts through the iron flavour of the tuna and interacts with the fish oil to make the flesh of the fish melt in your mouth. With salmon, there is more harmony as the Sake brings forth the cherry notes of the salmon and balances the fish oil and flavours.
